<P>PROBLEM TO BE SOLVED: To provide an electric water heater for quickly cooling a liquid inside a container to a set temperature at which the liquid is kept. Ž<P>SOLUTION: The electric heater includes: a heating means 2 for heating the liquid contained in the container 1; a temperature detecting means 3 for detecting the temperature of the liquid inside the container 1; a circulating path 5 for returning the liquid to the container 1 by switching a switching valve 6 provided in the middle of a discharging path 4 for discharging the liquid inside the container 1 to the outside; an electric pump 7 for discharging the liquid inside the container 1 to the outside via the discharging path 4; a control means 8 for controlling switching of the switching valve 6 and driving of the electric pump 7; and a heat exchanger 9 for releasing heat of the liquid which flows in the circulating path 5. The switching valve 6 is switched to the circulation path 5 side and the electric pump 7 is driven to pass the liquid through the circulating path 5, allowing the heat to be released by the heat exchanger 9.
