摘要:
PURPOSE:To produce soya milk for bean curd production, enabling the production of bean curd having high elasticity, by immersing soybeans in water at normal temperature and grinding the soaked soybeans at <=10 deg.C. CONSTITUTION:Whole soybeans, skinned soybeans, etc., are immersed in city water e.g. at 15-30 deg.C for 5-20hr to effect sufficient soaking and swelling of the beans. The obtained soaked soybeans are ground at <=10 deg.C, preferably at about 5 deg.C. The obtained soybean dispersion is heated at about 100 deg.C for about 5min and filtered by conventional means to separate and remove bean curd refuse.
