A process for preparation of desert wine material provides for grinding of sorts of grapes, stemming, sulfatation and infusion of fiber with subsequent fermentation of wort on pure culture yeast, fortification, ageing and conditioning. Furthermore, the fiber is sulfurized by the doses of 200-400 mg/l of general SO, infusion of fiber is combined with biological desulfitation by yeasts Schizosaccharomyces, and fermentation is realized on the pure culture yeast of the strain Muscat P(4).
